Born and raised in Cancún, Mexico, Pamela grew up surrounded by the vibrant flavors of Yucatán cuisine, a rich blend of Mayan, Spanish, and Caribbean influences. Her childhood kitchen was filled with the aroma of achiote, habaneros, and citrus from bitter oranges.

After moving to Texas as a young girl, Pamela carried those flavors with her, building over a decade of experience in the service industry from humble kitchens to some of San Antonio’s most celebrated fine dining restaurants. Her passion for hospitality and detail shines through in every dish and every guest interaction, ensuring that every experience with The Midnight Mayan Express feels both personal and unforgettable.

Fueled by Fire and Family Tradition

Born and raised in San Antonio, Texas, Rolando grew up with a love for the grill. His family roots stretch to the Rio Grande Valley, where weekend barbecues weren’t just meals, they were traditions. From slow-cooked brisket and barbacoa to mesquite-grilled meats, South Texas BBQ blended Mexican soul with German precision.

Inspired by his father, whose backyard cookouts were celebrated among family and friends, Rolando learned the art of grilling not from recipes, but from experience, community, and passion. His food carries that same spirit: unpretentious, soulful, and made to bring people together.

What started as a shared dream turned into a traveling kitchen, a blend of South Texas smoke and Yucatán spice. Our goal is simple: to serve good food for good people, meals that remind you of home, and flavors that tell a story generations in the making.
